Happy Easter you fabulous lot.
I’ll start by just saying how amazing it feels to have 4 consecutive days off work. You have no idea how much I needed a few days to refuel, eat lots, see friends and family and eat more. There are Easter treats all over the internet so I imagine you’ll be spoiled for choice this weekend, but nonetheless, I’m here to make that choice nice and easy with some quick Easter-fied Rocky Road. And you can’t really go wrong with Rocky Road. Here’s what you’ll need:
100g unsalted butter
225g dark chocolate (I actually did half dark, half milk which was a very good shout)
2tbsp golden syrup
2tbsp cocoa powder
An assortment of mini eggs (200g) – I used Cadbury’s Mini Eggs, Galaxy Golden Eggs and white chocolate chunks.
50g mini marshmallows
100g digestive/rich tea biscuits
4 full size creme eggs
50g White Chocolate
Melt the button and chocolate in a bowl over hot water and then add the cocoa and golden syrup. Combine thoroughly and leave to cool.
Break up the biscuits into small pieces (you want some bigger chunks so don’t smash to smithereens) and add to the chocolate mix.
Add your chocolate egg collection and marshmellows and mix until everything is chocolatey.
Line a tin with greaseproof paper and pour in your rocky road, patting it down evenly.
Cut in halve your Cadbury’s Creme Eggs and firmly place sporadically into your mixture.
Melt the white chocolate (being careful not to burn it) and pipe onto the rocky road to decorate.
Stick in the fridge to set for at least two hours. When ready, cut into pieces with a sharp knife and serve almost definitely with a cup of tea.
So good, so rich, so easy and ideal for a chocolate lovers treat this Easter. The recipe can be changed up to suit whatever your favourites are and literally takes 10 minutes to prepare. Such a good’un and I will for sure be making a load to treat the family this Easter… and most likely make a batch just for myself. Guilt.
