Gooood Afternoon. Today, is my beautifffffful niece Ellie’s 7th birthday (they get old bloody fast btw). For this reason, I took to the kitchen and very naught-ally made some vanilla and red velvet cupcakes straight from Betty Crocker. I’ve been busy so didn’t want to be stuck making them forever, plus I brought lots of pretty decorations so wanted to make it more about that rather than showing off my insane baking skills (ahem). Anyway, enough excuses. Here is what went down.
WHAT I NEEDED TO ADD –
2 Medium Eggs, 2 tbsp vegetable oil, 4 tbsp water
SKILLS I NEEDED – Absolutely none. I used an electric whisk and plotted the creamy mixture into the cases. After 15 short minutes, I took them out and left to cool.
I decided to extra cheat and use ready piped icing as it’s super quick and I didn’t really fancy the butter icing that came with the kit. I then began decorating (probably not my best work, but I’m not too sure a 7 year old will mind) I decided to go for pink and vanilla icing, wafer daises, sugar flowers, baby blue sugar and white chocolate stars.
Super Super easy and they look beautt. I picked up a few cupcake cases from Tesco for only £2 each and they really make a difference when giving cakes as a present. Real Pretty. We are off to After’s later on today to consume our body weight in waffles and ice cream.. as if we haven’t eaten enough sugar already. If you are looking for a quick fix, then Betty Crocker’s baking kits are the one. It literally takes 30 minutes out of your day and tastes just as good. Although, I do promise to be better next week and cook something from scratch.
